Recipes with Reema our ACU Sport Gym Coordinator (Bach of Sci Food & Nutrition)

EP 4: Omelets

Ingredients

2 eggs, beaten
1/3 cup milk
1 spring onion
10gm butter OR coconut oil
1/2 cup of any cheese you have on you (I usually have some tasty in the fridge)
A bunch of any fresh herbs- my go-to are always fresh parsley, basil
Some baby spinach or spinach
if I have it Zucchini/snow peas/mushrooms/pumpkin- ANY veggies you have a left over in your fridge
Salt and Pepper to taste.

Method

Chop up all your herbs and veggies and mix in a bowl with the egg, milk and cheese. Put the knob of butter or coconut oil in the pan on medium heat. Once it melts, add the egg mixture and turn up the stove to high. Either flip your omelet once a crust has formed on the bottom OR place it in the oven to finish off (180°C for 15 minutes) Put it on a plate and eat it all on your own
